What You’ll Need
Servings: 4 servings
Calories: 450kcal
Ingredients
- For the Filling
- 1.5 lbs beef stew meat cubed
- 1 onion chopped
- 2 cloves garlic minced
- 1/2 cup low-carb stout or keto-friendly beer
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (optional)
- 1 tsp fresh thyme or rosemary chopped
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- For the Keto Crust
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking powder
- 1/4 cup cold butter cubed
- 1 egg beaten
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Prepare the filling: In a large pot or Dutch oven, heat olive oil or butter over medium-high heat. Brown the beef stew meat on all sides, about 4-5 minutes. Remove and set aside.
- Sauté the onions and garlic: In the same pot, sauté the chopped onions and garlic for 3-5 minutes, until softened.
- Add the stout and broth: Stir in the low-carb stout, beef broth, tomato paste, Worcestershire sauce (if using), and fresh thyme. Return the browned beef to the pot, cover, and let it simmer on low heat for 1.5-2 hours, or until the beef is tender and the sauce has thickened.
- Preheat the oven: Preheat your oven to 350°F (175°C).
- Make the keto crust: In a mixing bowl, combine almond flour, coconut flour, baking powder, and a pinch of salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. Stir in the beaten egg and cheddar cheese (if using), forming a dough.
- Assemble the pie: Transfer the beef filling into an oven-safe pie dish. Roll out the keto dough between two sheets of parchment paper, then place it over the beef filling. Trim the edges and press down lightly to seal.
- Bake: Bake the pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and firm.
- Serve: Let the pie cool for a few minutes before serving. Enjoy this keto-friendly comfort food!
