Burgundy’s irresistible cheese puffs — light, hollow, eggy pastry balls flavored generously with Gruyère or Comté, served warm with an aperitif. This keto version uses almond flour choux pastry that achieves a remarkably similar puff with a golden, cheesy shell. They disappear from any plate within minutes.
