Chicken Keema Omelette, plated and ready to serve

The keema-stuffed omelette is a Mughal-era concept that has survived because it is simply magnificent. A thin, flame-kissed egg wrapper encloses a fragrant filling of spiced minced chicken — warm with cumin, sweet with caramelized onion — rolled tight and sliced to reveal layers of gold and spice that perfume the plate with pure, irresistible morning comfort. The aromatic minced meat filling wrapped in a thin, golden egg envelope creates a satisfying hand-held meal that travels well.
