Chicken Hariyali Tikka, plated and ready to serve

Hariyali means ‘green’ — this tikka gets its beautiful color from a marinade of coriander, mint, spinach, and green chili, a combination so aromatic that the kitchen fills with the scent of a herb garden whenever the skewers hit the grill. Vibrantly green from this deep marinade, these tikka pieces char beautifully on the grill and release a herbal, almost grassy fragrance that contrasts thrillingly with the smoky char and the sweet, endlessly tender chicken within. The flavor is bright, fresh, and completely different from red tikka.
