Avgolemono is Greek comfort food in its most essential form — a silky, golden broth thickened with egg and lemon until it becomes something almost velvet-like. The combination of chicken, lemon, and egg sounds simple but delivers a flavor that is deeply restorative and uniquely Greek. This keto version swaps the traditional rice for cauliflower rice and loses absolutely nothing.
What You’ll Need
Servings: 6 servings
Calories: 280kcal
Ingredients
- 1 whole chicken (3-4 lbs) or 2 lbs chicken pieces
- 8 cups water or chicken broth
- 1 small onion halved
- 2 celery stalks
- 2 carrots (use sparingly — count carbs)
- 2 cups cauliflower rice
- 3 large eggs
- Juice of 2 lemons (about 1/3 cup)
- Salt and white pepper to taste
- Fresh dill for garnish
Instructions
- Simmer whole chicken in water with onion, celery, and carrots 1.5 hours. Remove chicken, strain broth, and shred all meat, discarding skin and bones.
- Return broth to pot. Bring to a gentle simmer and add cauliflower rice. Cook 5 minutes.
- In a bowl, whisk eggs until frothy. Slowly whisk in lemon juice.
- Ladle 1 cup of hot broth into the egg-lemon mixture while whisking constantly — this tempers it so it doesn't scramble.
- Pour the tempered mixture back into the pot, stirring gently. Add shredded chicken. Reduce heat to low and cook 2 minutes. Do not boil after adding eggs.
- Season with salt and white pepper. Serve garnished with fresh dill.
