Barfi is India’s answer to fudge — dense, sweet, and richly flavored. Each pale square carries the clean, roasted nuttiness of almonds and a sweetness that is measured and elegant, studded with silver leaf and pistachios; it looks and tastes like something from the finest mithai shop in India, and it is shockingly, delightfully simple to make. The toasting step is what transforms it from a sweet mixture into a proper Indian mithai.
