Ingredients

  • 4 cups mixed salad greens
  • 1/2 cup provolone cheese cubed
  • 1/2 cup salami sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup roasted red peppers
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • In a large bowl, combine the mixed greens, provolone, salami, olives, and roasted red peppers.
  • Drizzle the dressing over the salad and toss to combine.
  • Serve immediately.

Notes

Chef's Tip: Cube the provolone rather than slicing it - it holds up better mixed through the greens instead of sliding off. Keto Swap: none needed - naturally keto.
