Ingredients
- 800 g pork spare ribs cut into short pieces
- 2 tbsp fermented black beans rinsed and chopped
- 4 cloves garlic minced
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sesame oil
- 1 tsp allulose or preferred keto sweetener
- 1 red chili sliced
- 1 tbsp glucomannan powder
- 2 scallions sliced, for garnish
Instructions
- In a bowl, combine the ribs with black beans, garlic, soy sauce, Shaoxing wine, sesame oil, allulose, and chili. Toss well and marinate at least 30 minutes.
- Sprinkle the glucomannan powder over the ribs and toss again to coat evenly.
- Arrange the ribs in a single layer on a heatproof plate.
- Steam over high heat for 40-45 minutes, until the ribs are very tender.
- Garnish with scallions before serving.
Notes
Chef's Tip: Marinating the ribs for at least 30 minutes lets the black bean flavor really penetrate before steaming. Keto Swaps: a light dusting of glucomannan powder replaces cornstarch, helping the sauce cling to the ribs as they steam.
