Ingredients

  • 800 g pork spare ribs cut into short pieces
  • 2 tbsp fermented black beans rinsed and chopped
  • 4 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sesame oil
  • 1 tsp allulose or preferred keto sweetener
  • 1 red chili sliced
  • 1 tbsp glucomannan powder
  • 2 scallions sliced, for garnish

Instructions

  • In a bowl, combine the ribs with black beans, garlic, soy sauce, Shaoxing wine, sesame oil, allulose, and chili. Toss well and marinate at least 30 minutes.
  • Sprinkle the glucomannan powder over the ribs and toss again to coat evenly.
  • Arrange the ribs in a single layer on a heatproof plate.
  • Steam over high heat for 40-45 minutes, until the ribs are very tender.
  • Garnish with scallions before serving.

Notes

Chef's Tip: Marinating the ribs for at least 30 minutes lets the black bean flavor really penetrate before steaming. Keto Swaps: a light dusting of glucomannan powder replaces cornstarch, helping the sauce cling to the ribs as they steam.
