This is the dish that built soul food breakfast counters — thick-cut pork chops seared hard, then smothered under a blanket of caramelized onions and dark gravy until they’re fork-tender. Ladled over a bowl of cauliflower grits finished with sharp cheddar and butter, it eats like the real thing because the technique — not the starch — is what makes it taste right.
What You’ll Need
Servings: 4 servings
Calories: 480kcal
Ingredients
- 4 bone-in pork chops about 3/4 inch thick
- 2 tbsp butter
- 2 tbsp avocado oil
- 1 large yellow onion thinly sliced
- 2 cloves garlic minced
- 2 cups beef bone broth
- 1 tsp xanthan gum
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 medium head cauliflower riced
- 1/2 cup heavy cream
- 3/4 cup sharp cheddar shredded
- 2 tbsp butter (for grits)
Instructions
- Season pork chops generously with salt, pepper, and smoked paprika.
- Heat avocado oil in a heavy skillet over medium-high heat. Sear chops 3–4 minutes per side until deeply browned. Remove and set aside.
- Add butter to the same skillet, then onions. Cook 8–10 minutes, stirring often, until deeply caramelized.
- Add garlic and cook 1 minute, then pour in bone broth, scraping up browned bits from the pan.
- Whisk in xanthan gum a little at a time until gravy thickens slightly. Return chops to the skillet, spooning gravy and onions over top.
- Cover and simmer 15–18 minutes, until chops are tender and cooked through.
- Meanwhile, steam riced cauliflower until tender, about 8 minutes. Drain well, pressing out excess moisture.
- Stir cream, cheddar, and butter into the cauliflower until smooth and creamy. Season with salt and pepper.
- Spoon grits into bowls, top with a chop and a generous ladle of onion gravy.
