Sernik is Poland’s genuine national cheesecake, traditionally made with twaróg rather than cream cheese for a denser, slightly grainier texture than its American cousin. This version keeps that same character, sweetened with a sugar-free sweetener and baked over an almond flour crust.

Ingredients
- 1 1/2 cups almond flour plus 4 tbsp melted butter for the crust

- 1/3 cup heavy cream
- 1 tbsp vanilla extract
- 2 tbsp lemon zest

- Mix in sweetener, cream, vanilla, lemon zest, and salt until smooth.
- Pour filling over the crust.
- Bake 50–60 minutes until the center is just set with a slight jiggle.
- Turn off the oven and let the cheesecake cool inside with the door cracked for 1 hour.
