What You’ll Need

Calories: 380kcal
Ingredients
- 1 lb white fish fillets (such as cod or haddock) cut into bite-sized pieces
- 1/2 lb shrimp (optional)
- 1 onion chopped
- 2 cloves garlic minced
- 2 cups fish or chicken broth
- 1 cup heavy cream
- 1/2 cup diced tomatoes (optional, for flavor)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tbsp fresh thyme chopped
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté the onions and garlic: In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, and sauté for 3-5 minutes until softened and fragrant.
- Simmer the broth: Add the fish or chicken broth, thyme, bay leaf, and diced tomatoes (if using). Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld together.
- Add the fish and shrimp: Stir in the fish fillets and shrimp, if using. Cook for 5-7 minutes, or until the fish is tender and the shrimp is cooked through.
- Finish with cream: Lower the heat and stir in the heavy cream. Let the stew simmer for another 5 minutes until the broth thickens slightly. Season with salt and pepper to taste.
- Serve: Remove the bay leaf and ladle the stew into bowls. Garnish with fresh parsley and serve hot.
