Ingredients

  • 1 lb cooked corned beef chopped or shredded
  • 2 tbsp olive oil or butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 small head of cauliflower chopped into small florets
  • 1 bell pepper diced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)
  • Optional: Fried eggs for serving

Instructions

  • Cook the cauliflower: Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add the cauliflower florets and cook for 8-10 minutes, stirring occasionally, until they start to brown and become tender. Remove from the skillet and set aside.
