The legendary ‘upside-down’ caramelized apple tart from the Hôtel Tatin in Lamotte-Beuvron — caramelized apples arranged in a pan, covered with pastry, baked, then dramatically inverted at the table. This keto version uses a buttery almond flour crust and erythritol caramel, and thinly sliced, low-sugar Granny Smith apples to keep carbs honest.
