From northern France, particularly Picardy — a rustic leek tart with a thick, custard-like filling of slowly sweated leeks bound with cream and eggs in a crisp almond flour pastry shell. Less well known than quiche Lorraine, it is equally magnificent, with the leeks’ gentle sweetness making every slice deeply comforting.
