Khanom Pandan is Thailand’s answer to green velvet cake — a vibrant, naturally green cake made from pandan juice that fills every kitchen with its distinctive vanilla-grassy aroma during baking. Using almond flour instead of plain flour and erythritol instead of sugar produces a cake with the same extraordinary fragrance and moisture, but suitable for the ketogenic lifestyle without any sacrifice in flavour.
