Yam Khai Dao Fried Egg Salad, plated and ready to serve

Yam Khai Dao is one of Thailand’s most clever salads — taking the already-glorious Thai fried egg and dressing it while still hot with a bright, sharp lime and chili sauce so it absorbs into the crispy edges. The contrast of the hot, oil-crisped egg with the cold, acidic dressing is a textural and flavour masterpiece.
