Panang is the richest, most concentrated of Thailand’s curries. Unlike its brothier cousins, Panang uses very little liquid, resulting in a thick sauce that clings to every piece of beef. The paste includes ground peanuts or roasted cumin, giving a nutty depth not found elsewhere. Finished with a float of rich coconut cream and a tangle of kaffir lime chiffonade, it is a curry of pure indulgence, best eaten slowly.
