Sauerbraten is considered the national dish of Germany, and it is everything a national dish should be — deeply traditional, technically interesting, and absolutely sensational on the plate, with a darkly complex, tangy-sweet gravy. The multi-day vinegar marinade tenderises the meat to an almost supernatural degree and flavours it throughout, while the braising liquid reduces into a glossy, complex gravy that requires nothing else. This keto version omits the traditional gingerbread crumbs used to thicken and sweeten the gravy, relying instead on a touch of xanthan gum for the same silky body.
