This is groundnut stew’s heartier, more savory cousin — chicken thighs simmered directly in a rich peanut sauce rather than the lighter, greens-forward version earlier in this chapter. It’s a genuine Ugandan farmhouse main course, the kind of dish built to feed a full table with very little fuss.
