Ingredients
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/4 cup erythritol
- 1/4 tsp baking powder
- 1 large egg
- 1 tbsp melted butter
- 1/4 tsp vanilla extract
- Coconut oil for frying
- 1/4 cup powdered erythritol for syrup
- 1 tbsp water for syrup
- 1 tsp vanilla extract for syrup
- Keto-friendly sprinkles optional
Instructions
- In a large bowl, mix almond flour, coconut flour, erythritol, baking powder, egg, melted butter, and vanilla extract until a dough forms.
- Roll the dough into small balls, about the size of a marble.
- In a deep skillet, heat coconut oil over medium heat.
- Fry the dough balls in batches for 2-3 minutes, until golden brown. Remove and drain on paper towels.
- In a small saucepan, combine powdered erythritol, water, and vanilla extract. Heat until the erythritol dissolves and forms a syrup.
- Toss the fried dough balls in the syrup and sprinkle with keto-friendly sprinkles if desired.
- Serve warm or at room temperature.
Notes
Chef's Tip: Fry the dough balls in small batches rather than crowding the pan - too many at once drops the oil temperature and leaves them greasy instead of crisp. Keto Swap: traditional honey syrup is replaced with powdered erythritol syrup.
