Ingredients

  • 4 cups water
  • 2 tbsp dried osmanthus flowers
  • 1/3 cup allulose or preferred keto sweetener
  • 2 tbsp agar agar powder
  • 1 tbsp goji berries for garnish

Instructions

  • Bring the water to a simmer and steep the osmanthus flowers for 5 minutes. Strain, discarding the flowers, and reserve the fragrant liquid.
  • Return the liquid to the pot with allulose and agar agar powder, whisking to dissolve. Bring to a boil, stirring constantly, then simmer 2 minutes.
  • Pour into small molds or a shallow dish and scatter goji berries over the top.
  • Refrigerate for at least 2 hours, until fully set.
  • Unmold or cut into cubes before serving chilled.

Notes

Chef's Tip: Agar sets at room temperature once dissolved, so work quickly once it's off the heat and pour before it starts to firm in the pot. Keto Swaps: allulose replaces sugar, and agar agar keeps this dessert naturally low-carb and gelatin-free.
