Ingredients

  • 1 cup toasted pecan halves sub: all almonds or walnuts
  • 1/4 cup almond flour sub: finely ground sunflower-seed meal
  • 1 tbsp powdered erythritol/monk-fruit blend sub: allulose, slightly softer crust
  • 3 tbsp melted butter sub: coconut oil or ghee
  • 1 pinch sea salt
  • 8 oz full-fat cream cheese softened, 225 g; sub: dairy-free block cream cheese
  • 1/2 cup heavy whipping cream sub: coconut cream
  • 1/4 cup powdered erythritol/monk-fruit blend to taste; sub: allulose
  • 3 tbsp fresh Key lime juice sub: regular lime juice + pinch citric acid
  • 1 tsp lime zest packed; sub: lemon zest
  • 1–2 tsp diced jalapeño seeded for mild; sub: minced serrano for more heat, or omit for classic
  • 1/2 tsp pure vanilla extract sub: almond extract
  • 1 tsp unflavored gelatin sub: 1 Tbsp powdered agar for vegan
  • 2 tbsp cold water to bloom gelatin

Instructions

  • Make the crust: Blitz pecans, almond flour, sweetener, and salt in a food processor to a fine meal. Pulse in melted butter until mixture clumps. Press firmly into a parchment-lined pan. Chill while you prep filling.
  • Bloom & dissolve gelatin: Sprinkle gelatin over cold water; let stand 5 min. Microwave 10 sec or warm gently until just melted — do not boil.
  • Whip filling: Beat cream cheese and sweetener until fluffy. Stream in heavy cream; whip to soft peaks. Blend in lime juice, zest, vanilla, and melted gelatin. Fold in diced jalapeño.
  • Fill & chill: Spread filling over crust; smooth top. Refrigerate at least 4 hours, overnight best, until set.
  • Slice & garnish: Lift parchment, cut into bars. Garnish with extra lime zest curls or a jalapeño coin.
