Ugandan Cauliflower "Matoke", plated and ready to serve

Traditional matoke — mashed steamed green banana — is a genuine Ugandan staple, eaten daily in many households, and it’s far too high-carb for a ketogenic approach. This version isn’t a claim to replicate that flavor; it borrows matoke’s comforting mashed texture and role on the plate, built instead on steamed cauliflower finished with sautéed onion and garlic.
