Nyama choma — literally “grilled meat” in Swahili — is less a recipe than a national institution, the centerpiece of gatherings from family Sundays to full nyama choma restaurants built entirely around the ritual. The seasoning stays deliberately minimal here; the point has never been a complicated marinade, it’s real fire and good beef.
