An impossibly silky wild mushroom velouté — a blend of cremini, shiitake, and dried porcini simmered with shallots and thyme, enriched with cream and blended to a velvety amber finish, garnished with mushroom slices sautéed in truffle butter. This is the essence of autumn in a bowl, warming, deeply umami, and nutritionally magnificent.
