Tub Tim Grob literally means ‘ruby water chestnut’ — the water chestnuts are dyed red and coated in tapioca that becomes gloriously gelatinous when blanched, floating in ice-cold coconut milk. Our keto version uses konjac jelly cubes instead of tapioca-coated chestnuts — they have the same satisfying chewiness with none of the carbohydrate load.
