Tandoori prawns require the lightest touch with marinating time — unlike chicken or lamb that benefit from overnight marination, prawns need only 30 minutes before the acid in the marinade begins to ‘cook’ the delicate flesh. Jumbo prawns, their shells charred and crackling from the grill, pull away to reveal flesh that is sweet, smoky, and burnished deep red-orange with tandoori spice; finished with a hard squeeze of lime and fresh coriander, they disappear from the plate faster than you can cook them.
