Racuchy are small, thick Polish pancakes, traditionally studded with apple and lightly sweetened, often eaten as a weekend breakfast treat. This version keeps the same soft, slightly sweet character using almond flour and a sugar-free sweetener, with apple left out entirely to keep the carb count low.
