Matzah brei is a dish built entirely around one central debate — sweet or savory — and this version works either way. Crisp almond flour crackers get broken up, soaked in egg, and fried in butter until the edges turn golden and the inside stays soft.

Ingredients
- 1 1/2 cups almond flour (for matzah)
- 2 tbsp butter melted (for matzah)
- 1 large egg (for matzah)
- 1/2 tsp salt (for matzah)
- 4 large eggs (for brei)
- 2 tbsp milk or heavy cream
- 2 tbsp butter for frying
- Salt to taste, or cinnamon and sugar substitute for a sweet version
Instructions
- Preheat oven to 350°F (175°C). Mix almond flour, melted butter, egg, and salt into a dough. Roll thin between two sheets of parchment and cut into large cracker shapes.
- Bake 10–12 minutes, until golden and crisp. Cool completely.
- Break the almond flour matzah into rough 1-inch pieces.
- Whisk eggs with milk. Add the broken matzah pieces and let soak 2–3 minutes.
- Melt butter in a skillet over medium heat. Add the matzah and egg mixture, and cook, stirring gently, 4–5 minutes, until the eggs are set and the edges are lightly golden.
- Season with salt for a savory version, or cinnamon and sugar substitute for a sweet one, and serve hot.
