Lamb Korma, plated and ready to serve

Korma comes from the Turkish word kavurma, meaning ‘braised meat’ — the Mughals brought this technique to India and enriched it beyond imagination with nuts, cream, saffron, and rose water. It is the most luxurious of all Indian curries, the curry of emperors. The most regal lamb curry ever conceived, each piece of meat is bathed for hours in a pale, nutty, saffron-kissed sauce until it becomes impossibly tender, perfumed with cardamom, and entirely, undeniably fit for royalty.
