Kleftiko means "stolen" — legend says Greek rebels hid whole lambs in sealed clay pots buried underground to cook without smoke betraying their location. Today we use foil and an oven, but the principle is the same: the lamb cooks sealed in its own juices with olive oil, lemon, garlic, and herbs until it is impossibly tender. Opening the packet at the table is a full sensory experience.
What You’ll Need

Ingredients
- 4 lamb shoulder chops or 2 lbs bone-in lamb pieces
- 4 tbsp extra-virgin olive oil
- 6 garlic cloves smashed
- Juice and zest of 1 large lemon
- 1 tbsp dried Greek oregano
- 1 tsp dried thyme
- 2 bay leaves
- 2 medium zucchini thickly sliced
- Salt and cracked black pepper
- Fresh herbs to garnish
Instructions
- Preheat oven to 325F (160C). Score lamb pieces deeply.
- Combine olive oil, garlic, lemon juice and zest, oregano, thyme, salt, and pepper. Massage thoroughly into lamb.
- Place zucchini slices in the center of a large double sheet of foil. Lay lamb over the zucchini. Tuck bay leaves alongside. Pour any remaining marinade over the top.
- Seal the foil packet tightly — no gaps. Wrap in a second layer of foil for security.
- Bake 2.5-3 hours until lamb is completely tender. Open the packet carefully at the table — the steam is scalding and the aroma is extraordinary.

Health Benefits
- Bone-in lamb cooked sealed retains all fat-soluble vitamins and omega-3 fatty acids that open-air roasting loses to evaporation.
- The sealed cooking environment also concentrates the garlic’s allicin without fully destroying it.
- Lamb is one of the few meats with meaningful levels of vitamin D alongside its B12, zinc, and iron.
