Khai Palo is a beloved Bangkok street food — hard-boiled eggs braised in a deeply savoury, spiced broth until the whites absorb a beautiful mahogany colour and the sauce reduces to a fragrant glaze. Originally made with pork belly and tofu alongside the eggs, our version focuses on the eggs as the star, served as a satisfying protein-rich snack or side dish.
