Imam Baildi — Stuffed Eggplant with Tomato and Herbs, plated and ready to serve

Imam Baildi means "the imam fainted" in Turkish — legend says the religious leader swooned when he tasted this dish, either from pleasure or from the amount of olive oil used. This keto version uses a generous hand with the oil, just as the original intends. Sweet, silky eggplant stuffed and baked in a fragrant tomato-herb filling is one of the Mediterranean’s great vegetarian mains.
