When Greeks grill beef, they do not complicate it. A well-aged sirloin, seasoned boldly and cooked over screaming heat until the crust is caramelized and the interior is pink and juicy, finished with a cold pat of herb butter that melts into the meat as it rests. The butter carries oregano, garlic, and lemon zest — everything that makes Greek food unmistakably Greek.

Ingredients
- 4 sirloin steaks (8-10 oz each about 1 inch thick)
- 3 tbsp extra-virgin olive oil
- 1 tbsp dried Greek oregano
- 1 tsp smoked paprika
- 4 garlic cloves minced
- Salt and cracked black pepper
- 4 tbsp unsalted butter softened
- 1 tbsp fresh oregano minced
- 1 tbsp fresh flat-leaf parsley minced
- 1 tsp lemon zest
- 1 small garlic clove grated
- Pinch of sea salt and chili flakes
Instructions
- Make herb butter: Beat butter with oregano, parsley, lemon zest, garlic, salt, and chili until combined. Roll in plastic wrap into a log. Refrigerate until firm.
- Rub steaks with olive oil, oregano, paprika, garlic, salt, and pepper. Rest at room temperature 30 minutes.
- Heat grill to maximum. Grill steaks 3-4 minutes per side for medium-rare -- do not move them during cooking to build the crust.
- Rest steaks 5 minutes on a warm plate.
- Serve whole or sliced, each topped with a round of herb butter. Add lemon wedges alongside.
