Forelle Blau — Blue Trout — is one of Germany’s most unusual and spectacular dishes, requiring only the very freshest trout, ancient, elegant, and ethereally delicious. When an absolutely fresh trout hits a vinegar-acidulated court-bouillon, the natural slime coating on the skin turns a ghostly blue-grey. The effect is dramatic and beautiful, and the fish itself — gently poached — is incomparably delicate and sweet.
