This dish brings the entire South Indian breakfast ritual together — the sizzle of mustard seeds in hot coconut oil, the crackle of curry leaves, and the cooling relief of fresh coconut chutney. Velvet-soft egg curds are draped in a cooling swirl of coconut chutney before a sizzling tarka of mustard seeds and curry leaves is poured over the top; the sizzle, the fragrance, the contrast of cool and hot makes this utterly, memorably beautiful. It is comfort food distilled to its essence.
