A hearty and flavorful keto Italian sausage soup, made with spicy sausage, tomatoes, and vegetables, perfect for a filling low-carb meal.

Ingredients
- 1 lb Italian sausage spicy or mild
- 1 tbsp olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 4 cups chicken broth
- 1 can 14 oz diced tomatoes (no sugar added)
- 1 zucchini diced
- 1 cup spinach chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil and brown the sausage, breaking it up into crumbles.
- Add the onion and garlic to the pot and saute until fragrant.
- Stir in the diced tomatoes, chicken broth, and zucchini. Bring to a boil and simmer for 15 minutes.
- Stir in the spinach and cook for another 5 minutes. Season with salt and pepper.
- Ladle into bowls and serve.
