Ingredients

  • 12 cherry tomatoes about 6 oz
  • 12 fresh mozzarella balls bocconcini, about 6 oz
  • 12 fresh basil leaves
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar sugar-free
  • Salt and pepper to taste
  • 12 small skewers or toothpicks

Instructions

  • Thread one cherry tomato, one basil leaf, and one mozzarella ball onto each skewer. Repeat until all ingredients are used.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Lightly drizzle the balsamic and olive oil mixture over the skewers.
  • Arrange the skewers on a platter and serve immediately.

Notes

Chef's Tip: Assemble the skewers just before serving - basil browns quickly once dressed, and you want it vibrant green on the plate. Keto Swap: regular balsamic glaze (often contains added sugar) is replaced with a sugar-free balsamic reduction - check the label for 0g sugar per serving, most grocery stores now carry a keto-friendly version.
