Rome
A fresh and vibrant keto-friendly appetizer inspired by the classic Italian Caprese salad. Juicy cherry tomatoes, creamy mozzarella, fragrant basil, and a touch of balsamic vinegar make this dish low in carbs, high in flavor, and visually stunning — the kind of small bite that opens a Roman antipasto table.

Ingredients
- 12 cherry tomatoes about 6 oz
- 12 fresh mozzarella balls bocconcini, about 6 oz
- 12 fresh basil leaves
- 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar sugar-free
- Salt and pepper to taste
- 12 small skewers or toothpicks
Instructions
- Thread one cherry tomato, one basil leaf, and one mozzarella ball onto each skewer. Repeat until all ingredients are used.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Lightly drizzle the balsamic and olive oil mixture over the skewers.
- Arrange the skewers on a platter and serve immediately.
Notes
Chef's Tip: Assemble the skewers just before serving - basil browns quickly once dressed, and you want it vibrant green on the plate. Keto Swap: regular balsamic glaze (often contains added sugar) is replaced with a sugar-free balsamic reduction - check the label for 0g sugar per serving, most grocery stores now carry a keto-friendly version.
