Ingredients
- 1 whole chicken about 1.5kg, or bone-in chicken thighs
- 1 thumb fresh ginger sliced
- 3 scallions
- 1 tsp salt
- 2 cups Shaoxing wine
- 1 cup chicken poaching liquid reserved
- 1 tsp salt for the steeping liquid
- 1 tsp Sichuan peppercorns optional
- Goji berries for garnish
Instructions
- Bring a pot of water to a boil with ginger, scallions, and salt. Add the chicken and poach gently for 25-30 minutes, until just cooked through.
- Remove the chicken, reserving 1 cup of the poaching liquid, and plunge it into ice water for 5 minutes. Drain and pat dry.
- Combine the Shaoxing wine, reserved poaching liquid, salt, and Sichuan peppercorns if using in a container large enough to hold the chicken.
- Submerge the chicken in the wine mixture, cover, and refrigerate for at least 12 hours, or up to 2 days, turning occasionally.
- Remove the chicken from the liquid, chop into pieces, and serve cold, garnished with goji berries and a spoonful of the steeping liquid.
Notes
Chef's Tip: The longer the chicken steeps in the wine mixture, the more deeply flavored it becomes - a full 24 hours gives noticeably better results than the minimum 12. Keto Swaps: none needed - this dish is naturally keto as written.

About This Dish
Drunken chicken is a slow build — poached gently, then steeped for a full day or two in Shaoxing wine until the flavor reaches all the way through, served cold at the banquet table.
Nothing needs swapping here; this dish is naturally keto as written.
