Ingredients

  • 3 cups winter melon peeled, seeded, and cubed
  • 100 g cured ham Yunnan ham or prosciutto, thinly sliced
  • 5 cups chicken broth
  • 1 tbsp dried goji berries
  • 1 tsp fresh ginger sliced
  • 1 tsp salt or to taste
  • White pepper to taste
  • 2 scallions sliced, for garnish

Instructions

  • Bring the chicken broth to a simmer with the ginger slices.
  • Add the winter melon and ham. Simmer 20-25 minutes until the winter melon turns translucent and tender.
  • Stir in the goji berries during the last 5 minutes of cooking.
  • Season with salt and white pepper to taste.
  • Ladle into bowls and garnish with scallions.
