Ingredients
- 3 cups winter melon peeled, seeded, and cubed
- 100 g cured ham Yunnan ham or prosciutto, thinly sliced
- 5 cups chicken broth
- 1 tbsp dried goji berries
- 1 tsp fresh ginger sliced
- 1 tsp salt or to taste
- White pepper to taste
- 2 scallions sliced, for garnish
Instructions
- Bring the chicken broth to a simmer with the ginger slices.
- Add the winter melon and ham. Simmer 20-25 minutes until the winter melon turns translucent and tender.
- Stir in the goji berries during the last 5 minutes of cooking.
- Season with salt and white pepper to taste.
- Ladle into bowls and garnish with scallions.
