Ingredients
- 600 g pork ribs cut into pieces
- 8 cups water
- 2 bunches watercress trimmed
- 1 thumb fresh ginger sliced
- 1 tbsp goji berries
- 1 tsp salt or to taste
- White pepper to taste
Instructions
- Blanch the pork ribs in boiling water for 3-4 minutes to remove impurities, then drain and rinse well.
- In a large pot, combine the ribs, 8 cups fresh water, and ginger slices. Bring to a boil, then reduce to a gentle simmer.
- Cover and simmer for 75-90 minutes, until the ribs are very tender and the broth is fragrant.
- Add the watercress and goji berries. Simmer 5-8 minutes more until the watercress wilts.
- Season with salt and white pepper to taste.
