Ingredients

  • 600 g pork ribs cut into pieces
  • 8 cups water
  • 2 bunches watercress trimmed
  • 1 thumb fresh ginger sliced
  • 1 tbsp goji berries
  • 1 tsp salt or to taste
  • White pepper to taste

Instructions

  • Blanch the pork ribs in boiling water for 3-4 minutes to remove impurities, then drain and rinse well.
  • In a large pot, combine the ribs, 8 cups fresh water, and ginger slices. Bring to a boil, then reduce to a gentle simmer.
  • Cover and simmer for 75-90 minutes, until the ribs are very tender and the broth is fragrant.
  • Add the watercress and goji berries. Simmer 5-8 minutes more until the watercress wilts.
  • Season with salt and white pepper to taste.
