Ingredients

  • 300 g mixed red berries (raspberries strawberries, red currants)
  • 150 g blackcurrants or blackberries
  • 200 ml water
  • 3 tbsp erythritol
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 1/2 tsp xanthan gum (or 3 tbsp chia seeds)
  • 150 ml heavy cream to serve

Instructions

  • Combine berries, water, erythritol, lemon juice, and vanilla in a saucepan.
  • Bring to a boil, stirring. Simmer 5 min until berries burst.
  • Remove from heat. Whisk in xanthan gum very thoroughly — lumps will not dissolve.
