Korean Dubu Salad, Tofu Salad with Sesame Dressing
This Korean cafe-style salad tops crisp greens and vegetables with cubes of golden pan-fried tofu and a creamy, nutty sesame dressing. It is light but filling and makes a perfect keto lunch. The dressing is good enough to use on everything.
Heat the avocado oil in a nonstick skillet over medium-high heat. Fry the tofu cubes for 6 to 8 minutes, turning, until golden on all sides. Sprinkle with a pinch of salt.
Grind the sesame seeds in a mortar or spice grinder, then whisk in the remaining dressing ingredients until creamy.
Arrange the greens, cucumber, bell pepper, perilla and avocado in two bowls.
Top with the warm tofu and drizzle with the sesame dressing.
Notes
Pressing the tofu between paper towels before frying helps it crisp. The dressing keeps in the fridge for up to a week. The nutrition counts mayonnaise as oil and does not include the optional avocado.Chef's Tip: Toast the sesame seeds in a dry pan for 1 minute before grinding for the most fragrant dressing.Keto Swap: Store-bought Korean sesame dressings are often sweetened with sugar or corn syrup. This homemade version uses allulose.Success Tip: Add grilled chicken or a soft-boiled egg for a heartier meal.Nutrition is calculated from the ingredients and is an estimate per serving. Net carbs exclude fiber and allulose.
