Ingredients

  • 1 cup extra-virgin olive oil
  • 2 tbsp fresh oregano finely chopped (or 1.5 tsp dried)
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 1 tbsp fresh rosemary finely chopped (or 1 tsp dried)
  • 2 garlic cloves thinly sliced
  • 1/2 tsp red pepper flakes
  • Zest of 1/2 lemon
  • 1/4 tsp sea salt

Instructions

  • Gently warm (do not boil) olive oil with garlic slices over very low heat 5 minutes — this infuses the oil with garlic flavor without burning.
  • Remove from heat. Let cool 5 minutes.
  • Stir in all fresh or dried herbs, red pepper flakes, lemon zest, and salt.
  • Transfer to a clean jar. Let steep at room temperature for at least 1 hour before using. The flavors deepen overnight.
  • Store at room temperature 1 week, or refrigerate up to 3 weeks.
