Brazilian Vitamina de Abacate, plated and ready to serve

Brazilian Vitamina de Abacate, Avocado Smoothie

Most of the world thinks of avocado as savory, but in Brazil it is treated like any other sweet fruit. Vitamina de abacate is a thick, creamy shake of ripe avocado blended with cold milk, a touch of sweetness and a squeeze of lime. It is rich, refreshing and packed with healthy fat, which makes it a natural keto breakfast.

Ingredients

  • 1 medium ripe avocado (about 7 ounces of flesh)
  • 1 1/2 cups cold unsweetened almond milk
  • 1/4 cup heavy cream
  • 2 tablespoons allulose or to taste
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon vanilla extract
  • 4 or 5 ice cubes

Instructions

  • Scoop the avocado flesh into a blender.
  • Add the almond milk, cream, allulose, lime juice, vanilla and ice.
  • Blend on high for 45 to 60 seconds, until completely smooth and thick.
  • Taste and add a little more allulose or lime if needed. Pour into glasses and serve right away.

Notes

Use an avocado that gives to gentle pressure but is not stringy or brown inside. The lime brightens the flavor and slows browning, but the smoothie is still best drunk fresh. For a thicker, spoonable version, cut the almond milk by half.
Chef's Tip: Freeze avocado chunks in advance and use them in place of the ice for an extra-thick, milkshake-style vitamina.
Keto Swap: Brazilian vitaminas are usually made with whole milk and a few spoonfuls of sugar. Unsweetened almond milk, a little cream and allulose keep all the creaminess with only a few grams of net carbs.
Success Tip: Add a tablespoon of unsweetened cocoa powder for a chocolate version that kids will not believe is made with avocado.
Nutrition is calculated from the ingredients and is an estimate per serving. Net carbs exclude fiber and allulose.
