Brazilian Picadinho Carioca, plated and ready to serve

Brazilian Picadinho Carioca, Rio-Style Diced Beef Stew

Picadinho is Rio de Janeiro's homey beef stew: small cubes of beef simmered in a rich tomato and onion sauce until spoon-tender. Cariocas love it for lunch, crowned with a soft egg. Served over cauliflower rice, it is pure comfort food without the carb crash.

Ingredients

  • 1 3/4 pounds beef chuck or sirloin cut into 1/2-inch cubes
  • 1 teaspoon fine salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 large ripe tomato seeded and chopped
  • 2 teaspoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 1 1/2 cups beef bone broth
  • 3 cups riced cauliflower cooked in butter, for serving
  • 1 tablespoon butter for the cauliflower
  • 4 large eggs poached or fried
  • 2 tablespoons chopped parsley and scallion

Instructions

  • Season the beef with the salt and pepper. Heat the olive oil in a heavy pot over high heat and brown the beef in two batches, without crowding, until deep brown on several sides. Move to a bowl.
  • Lower the heat to medium. Add the onion and cook for 5 minutes until soft, then add the garlic and cook 1 minute more.
  • Stir in the tomato and tomato paste and cook for 5 minutes, scraping up the browned bits, until the tomatoes collapse into a sauce.
  • Return the beef and its juices to the pot. Add the Worcestershire sauce, bay leaf and broth. Bring to a simmer, cover and cook gently for 45 to 60 minutes, until the beef is tender and the sauce is thick.
  • Meanwhile, cook the cauliflower rice in the butter for 5 minutes and cook the eggs to your liking.
  • Remove the bay leaf, taste for salt and spoon the picadinho over the cauliflower rice. Top each serving with an egg and the herbs.

Notes

Browning the beef well is where most of the flavor comes from, so give it time and do not crowd the pot. If the sauce is still thin at the end, simmer uncovered for 5 to 10 minutes. Sirloin cooks faster than chuck; check it after 30 minutes.
Chef's Tip: Cut the beef small and evenly. Picadinho comes from picar, to chop, and the little cubes are what make it feel different from an ordinary stew.
Keto Swap: In Rio, picadinho comes with white rice, farofa, fried banana and sometimes potatoes in the stew. Cauliflower rice takes the place of the rice, and the potatoes are simply left out.
Success Tip: Make a double batch; picadinho freezes well and reheats in minutes for a busy weeknight.
