Brazilian Manteiga de Garrafa, Northeastern Bottle Butter
Manteiga de garrafa, bottle butter, is a golden clarified butter from the dry backlands of northeastern Brazil, where it stays liquid in the warm climate and is sold in bottles. It is poured over carne de sol, eggs and grilled cheese and has a gentle, nutty taste. It is pure fat, which makes it perfect for keto cooking.
Tip: Because the milk solids are removed, bottle butter can take much higher heat than regular butter. Use it to fry eggs, sear steak or drizzle over roasted vegetables.
