Brazilian Limonada Suíça, plated and ready to serve

Brazilian Limonada Suíça, Creamy Brazilian Limeade

Limonada suíça, Swiss lemonade, is a frothy, pale green limeade made by blending whole limes, peel and all, with water and sugar. Many cafes add condensed milk for a creamy version. This one uses a splash of heavy cream and allulose.

Ingredients

  • 2 limes ends trimmed, cut into quarters
  • 3 cups cold water
  • 1/3 cup allulose
  • 1/4 cup heavy cream
  • 2 cups ice

Instructions

  • Remove the white center core from the lime quarters, which adds bitterness.
  • Put the limes, cold water and allulose in a blender and pulse 4 or 5 times, for no more than 10 seconds in total. Blending longer makes the drink bitter.
  • Strain immediately through a fine sieve, pressing on the pulp, and discard the solids.
  • Return the liquid to the blender, add the cream and ice and blend for a few seconds until frothy. Serve right away.

Notes

Speed matters: the peel releases bitter oils if it is blended or left to sit too long, so serve it within a few minutes. The nutrition counts the whole limes, so the actual carbs are a little lower once the pulp is strained out.
Chef's Tip: Choose limes with thin, smooth, shiny skin. They are juicier and less bitter than thick-skinned ones.
Keto Swap: Brazilian limonada suíça uses plenty of white sugar, and the creamy style uses sweetened condensed milk. Allulose and heavy cream give the same sweet, silky drink without the sugar.
Success Tip: Leave out the cream for a lighter version that kids love on hot days, and serve it with crushed ice and a lime wheel.
