Ingredients

  • 2 cups bite-size roasted turkey pieces white or dark; sub: rotisserie chicken or cooked pork shoulder
  • 1/3 cup sugar-free mole sauce sub: low-carb chipotle BBQ or buffalo sauce
  • 1 egg beaten; sub: 2 Tbsp mayo + 1 tsp water
  • 1/2 cup blanched almond flour sub: crushed pork rinds or finely shredded Parmesan
  • 1 tbsp sesame seeds sub: crushed pepitas or sunflower seeds
  • 1/2 tsp smoked paprika sub: chili powder or ground chipotle
  • 1/4 tsp sea salt + 1/4 tsp black pepper
  • Avocado-oil spray sub: olive-oil spray
  • Optional garnishes: lime wedges fresh cilantro, queso fresco crumbles

Instructions

  • Mole coat: In a bowl, toss turkey pieces with mole sauce until evenly coated. Let sit 5 minutes so flavors soak in.
  • Set up breading station: Bowl #1 — beaten egg. Bowl #2 — almond flour, sesame seeds, paprika, salt, pepper mixed.
  • Bread the bites: Dip each mole-coated piece in egg, then press into almond-flour mixture. Shake off excess; place on a parchment-lined tray.
  • Air-fry: Preheat air fryer to 400°F for 3 minutes. Lightly mist basket with avocado-oil spray. Arrange turkey bites in a single layer; spritz tops with more oil. Cook 7–9 minutes, flipping halfway, until crust is deep golden and internal temp hits 165°F.
  • Serve: Pile onto a platter. Squeeze fresh lime, scatter cilantro and queso fresco.
